Ingredients

Potato1 large, cubed
Sweet potato1 small, cubed
Pumpkin1 cup, cubed
Colocasia (taro root, eddoes)3, peeled and cubed
Radish (daikon radish, mooli)1 small, cubed
Brinjal (eggplant, aubergine)2 small, cubed
Cauliflower1 cup florets
Cabbage1 cup, chopped
Green peas½ cup
Green beans½ cup, chopped
Bottle gourd (opo squash, calabash)1 cup, cubed
Spinach1 cup, chopped
Fenugreek leaves½ cup
Tomato2, chopped
Ginger2.5 cm, grated
Green chilli2
Ghee2 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Turmeric (ground turmeric)½ tsp
Coriander powder (ground coriander)2 tsp
Red chilli powder (indian red chili powder)1 tsp
Garam masala¾ tsp
Dry mango powder¾ tsp
Salt2 tsp
Water1 cup

Method

4 steps
  1. 1Heat ghee in a large cooker, add cumin, asafoetida, ginger and chilli.
  2. 2Add tomato and powders and cook till soft.
  3. 3Add all vegetables except spinach and methi, with salt and water. Pressure cook for 2 whistles. Let the pressure release naturally.
  4. 4Stir in spinach, methi, garam masala and amchur and simmer 5 minutes.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
