Ingredients

Napa cabbage (wombok, chinese leaf)1 medium head, quartered
Salt½ cup coarse salt
Water4 cups
Pear1, julienned
Radish (daikon radish, mooli)a piece, julienned
Carrot½, julienned
Garlic8 cloves, sliced
Gingera thumb, sliced
Onion1, blended
Spring onion (green onion, scallion)3 stalks, cut
Dates4 jujubes or dates, sliced
Pine nuts1 tbsp
Sugar2 tsp

Method

5 steps
  1. 1Salt the cabbage quarters between the leaves and leave for 6 hours, turning once.
  2. 2Rinse three times and drain cut side down for an hour.
  3. 3Mix pear, radish, carrot, garlic, ginger, spring onion, jujubes and pine nuts.
  4. 4Tuck the filling between the leaves and pack into a jar.
  5. 5Blend onion with the water, sugar and a little salt, strain over the cabbage to cover. Ferment 1 day, then chill.
Serve it like this

Serve a wedge cut into bite size pieces in a shallow bowl with a ladle of its chilled brine.
