Ingredients

2 servings
Plain sponge caketwo 4 inch sponge rounds
Fresh cream (thickened cream, heavy cream)⅔ cup, chilled
Sugar2 tbsp, powdered
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Strawberries4, sliced
Sprinkles (hundreds and thousands)1 tsp
Water2 tbsp

Method

5 steps
  1. 1Cut two 4 inch rounds from a sponge with a ring or a small bowl.
  2. 2Whip the cream with the sugar and vanilla to firm peaks. Tint a spoonful with a dot of food colour for writing.
  3. 3Brush each layer with the water mixed with a pinch of sugar. Layer with cream and strawberries.
  4. 4Cover in cream and smooth the sides with a bench scraper or flat knife. Chill 20 minutes.
  5. 5Pipe a simple border, a doodle and a short message. Set in a takeaway box.
