Rice1 cup gobindobhog or short grain
Moong dal (split yellow mung beans)¾ cup, dry roasted
Water6 cups
Cauliflower2 cups florets
Potato2, halved
Green peas½ cup
Tomato1, chopped
Ginger2.5 cm, as paste
Whole spices2 bay leaves, 2 cloves, 2 cardamom, cinnamon
Cumin seeds1 tsp
Dried red chilli2
Turmeric (ground turmeric)½ tsp
Cumin powder (ground cumin)1 tsp
Red chilli powder (indian red chili powder)½ tsp
Ghee3 tbsp
Sugar2 tsp
Garam masala½ tsp
Salt1½ tspMethod
- 1Dry roast moong dal till golden and fragrant. Rinse with the rice.
- 2Fry potatoes and cauliflower in 1 tbsp ghee till golden. Set aside.
- 3Heat remaining ghee, add bay leaves, whole spices, cumin and red chilli. Add ginger paste, turmeric and powders.
- 4Add rice, dal, water and salt. Cook on medium 20 minutes, stirring.
- 5Add vegetables, peas, tomato and sugar. Cook 10 minutes till soft and flowing. Finish with garam masala and ghee.
Serve it like thisFluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
