Squid500 g, cleaned, in rings
Maida (all-purpose flour, plain flour)¾ cup
Egg1
Soda water (club soda)½ cup, cold
Cooking oil (vegetable oil)for frying, about 80 g stays in
Lemon1, in wedges
Saltto taste

Method

4 steps
  1. 1Pat the squid rings very dry and season with salt.
  2. 2Whisk flour, egg and cold soda water into a thin batter.
  3. 3Dip rings in batter and fry in hot oil in small batches until pale gold.
  4. 4Drain, salt and serve at once with lemon.
Serve it like this
