Ingredients

4 servings
Whole urad (whole black gram)¾ cup
Mustard oil1½ tbsp
Ghee2 tsp
Cumin seeds1 tsp
Asafoetidaa pinch
Garlic4 cloves
Ginger2.5 cm
Dried red chilli2
Turmeric (ground turmeric)¼ tsp
Coriander powder (ground coriander)2 tsp
Red chilli powder (indian red chili powder)½ tsp
Water3¾ cups
Saltto taste
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Dry roast the whole urad in an iron kadai until fragrant and a few shades darker. Cool and grind coarsely.
  2. 2Heat mustard oil, add cumin, asafoetida, red chillies, ginger and garlic.
  3. 3Add the urad powder, turmeric, coriander and chilli powder and fry 2 minutes. Add water gradually, stirring to avoid lumps.
  4. 4Simmer covered on low for 30 minutes, stirring now and then. Finish with ghee and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
