Ingredients

3 servings
Soya chunks1½ cups
Cornflour (cornstarch)3 tbsp, split
Maida (all-purpose flour, plain flour)1 tbsp
Cooking oil (vegetable oil)for shallow frying, about 2 1/2 tbsp absorbed
Garlic5 cloves, chopped
Ginger1.5 cm, chopped
Green chilli2, slit
Onion1, petals
Capsicum (green capsicum, green bell pepper)1, cubed
Soy sauce1 tbsp
Red chilli sauce1 tbsp
Tomato ketchup (ketchup)2 tsp
Vinegar1½ tsp
Water⅓ cup
Spring onion (green onion, scallion)2 stalks
Black pepper¼ tsp
Saltto taste

Method

4 steps
  1. 1Boil soya chunks in salted water 5 minutes, squeeze very dry.
  2. 2Toss with 2 tbsp cornflour, maida, pepper and salt and shallow fry until crisp.
  3. 3In 1 tbsp oil on high, fry garlic, ginger and chilli, then onion and capsicum for a minute.
  4. 4Add sauces, vinegar and remaining cornflour mixed into the water. Bubble until glossy, toss in soya and spring onion.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
