Chana dal (split chickpeas)1 cup, soaked
Turmeric (ground turmeric)½ tsp
Waterfor cooking
Cumin seeds1½ tsp, divided
Green chilli2, chopped
Ginger1.5 cm
Dry mango powder1 tsp
Red chilli powder (indian red chili powder)1 tsp
Garam masala½ tsp
Maida (all-purpose flour, plain flour)2 cups
Black pepper½ tsp, crushed
Cooking oil (vegetable oil)for dough, tempering and frying
Onion1 small, finely chopped
Tamarindfor chutney
Jaggeryfor chutney
Coriander leaves (cilantro)a handful

- 1Soak chana dal for 2 hours. Pressure cook with turmeric, salt and water, 2 whistles. Dal should be soft but hold shape.
- 2Heat 1 tbsp oil, add cumin, chilli and ginger, pour over the dal, then add amchur, chilli powder and garam masala. Simmer.
- 3Knead maida with cumin, pepper, salt, 2 tbsp oil and little water into a stiff dough. Rest.
- 4Roll thin rounds, prick all over with a fork and fry on medium till golden and crisp.
- 5Boil tamarind and jaggery into a quick chutney. Serve dal topped with onion, chutney and coriander, with pakwan.
Serve it like thisDrain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
