Ingredients

Pumpkin1½ cups, cubed
Brinjal (eggplant, aubergine)3 small, quartered
Drumstick (moringa pods)1, in fingers
Okra (lady's finger)8, cut
Sweet potato1 small, cubed
Shallots6
Tomato1, chopped
Tamarinda large lemon sized ball
Jaggery1 tbsp
Rice flour1 tbsp
Red chilli powder (indian red chili powder)2 tsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)1½ tbsp
Mustard seeds½ tsp
Fenugreek seeds¼ tsp
Dried red chilli2
Curry leavesa sprig
Water2½ cups
Saltto taste

Method

4 steps
  1. 1Extract tamarind juice in the water.
  2. 2Heat oil, splutter mustard, fenugreek, red chillies and curry leaves; add shallots and tomato.
  3. 3Add vegetables in order of hardness: drumstick, sweet potato, pumpkin, brinjal, okra; then tamarind water, chilli, turmeric, salt and jaggery.
  4. 4Mix rice flour with water, stir in and simmer until thick.
Serve it like this

Serve hot over rice with ghee, a papad and a spoon of pachadi on the side.
