Ingredients

8 servings
Maida (all-purpose flour, plain flour)2½ cups
Instant dry yeast2 tsp
Sugar½ cup, divided
Milk¾ cup, warm
Butter3½ tbsp, soft
Salt¾ tsp
Desiccated coconut (unsweetened shredded coconut)1 cup
Tutti frutti (glacé fruit, candied fruit)⅓ cup
Cashews3 tbsp, chopped
Raisins2 tbsp
Cardamom½ tsp
Glace cherries (candied cherries)5, chopped

Method

6 steps
  1. 1Mix maida, yeast, 40 g sugar and salt. Add the warm milk and knead 8 minutes, then knead in 35 g butter.
  2. 2Cover and rise 1 hour.
  3. 3Mix the coconut, tutti frutti, cashews, raisins, cardamom, the rest of the sugar and butter into a crumbly filling.
  4. 4Divide the dough in two. Roll one into a 9 inch circle in a greased tin, spread the filling, cover with the second circle and seal. Rise 30 minutes.
  5. 5Brush with milk, top with cherries and bake at 180 C for 25 to 30 minutes.
  6. 6Brush with a little butter or sugar syrup and cool before cutting into wedges.
Serve it like this
