Ingredients

4 servings
Soybeans⅔ cup dried soybeans
Water1.2 litres, plus soaking water
Sugar2 tbsp, optional

Method

5 steps
  1. 1Soak the soybeans overnight, then rub off and discard as many skins as you can.
  2. 2Blend the beans with the water in batches until very fine.
  3. 3Strain through muslin, squeezing out all the milk.
  4. 4Bring to the boil, then simmer 10 minutes, stirring and skimming.
  5. 5Sweeten if you like and serve hot or chilled.
