Ingredients

4 servings
Pork500 g pork shoulder, whole piece
Pork trotters400 g trotters or pork bones
Water10 cups
Onion1, halved
Garlic10 cloves
Gingera thumb, sliced
Spring onion (green onion, scallion)5 stalks, chopped
Cooked rice4 bowls
Garlic chivesa handful, cut
Gochugaru1 tbsp
Fish sauce1½ tbsp (or salted shrimp)
Salt1 tsp
Black peppera pinch

Method

5 steps
  1. 1Blanch the trotters 10 minutes, drain and rinse.
  2. 2Simmer trotters, pork, onion, garlic and ginger in the water for 90 minutes.
  3. 3Slice the pork; toss chives with half the gochugaru and a pinch of salt.
  4. 4Mix the rest of the gochugaru with a little broth into a red paste.
  5. 5Put rice in bowls, top with pork, pour over boiling broth and serve with chives, fish sauce, pepper and the chilli paste.
Serve it like this

Serve in a deep earthenware bowl, rice under pork slices, with chives, salted shrimp, chilli paste, kimchi and raw onion on the side.
