Ingredients

4 servings
Milk2½ cups
Condensed milk (sweetened condensed milk)½ cup
Sabja seeds (basil seeds)1 tbsp
Water1 cup
Vermicelli½ cup falooda sev
Rose syrup⅓ cup
Vanilla ice cream4 scoops
Pistachios2 tbsp, chopped
Almonds1 tbsp, slivered
Cardamom¼ tsp
Strawberries6, sliced
Tutti frutti (glacé fruit, candied fruit)2 tbsp

Method

6 steps
  1. 1Whisk the milk with half the condensed milk and the cardamom. Pour into a wide tray 2 cm deep and freeze 5 hours or overnight.
  2. 2Soak the sabja seeds in 1 cup water 15 minutes.
  3. 3Boil the vermicelli in water on medium heat 3 minutes until soft, then drain and chill in cold water.
  4. 4Chill the serving bowls in the freezer 10 minutes. Shave the frozen milk with a fork or grate it coarsely.
  5. 5Layer each bowl: a spoon of sev, sabja, rose syrup, then a tall mound of milk snow.
  6. 6Top with a scoop of ice cream, the remaining condensed milk and rose syrup, nuts, strawberries and tutti frutti. Serve at once.
Serve it like this

Build a tall snowy dome in a chilled glass bowl, run rose syrup down one side, crown with ice cream, and scatter pistachio and strawberry at the base.
