Ingredients

Maida (all-purpose flour, plain flour)5¼ cups, divided (500 g dough, 150 g filling)
Butter1¼ cups, divided (150 g dough, 120 g filling)
Curd (plain yogurt, natural yoghurt)¾ cup
Egg1
Instant dry yeast1½ tsp
Sugarscant 1 cup, divided (30 g dough, 150 g filling)
Saltpinch
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Egg yolk1, to glaze

Method

5 steps
  1. 1Mix 500 g flour, yeast, 30 g sugar and salt. Add 150 g melted butter, curd and egg and knead into a soft dough. Rest 1 hour.
  2. 2Rub 150 g flour, 120 g soft butter, 150 g sugar and vanilla together into khoriz.
  3. 3Roll the dough into a large rectangle, spread the khoriz over it and roll it up like a log. Flatten and cut into pieces or shape into rounds.
  4. 4Brush with egg yolk, prick with a fork and bake at 180°C until deep gold.
  5. 5Cool on a rack before cutting.
Serve it like this

Cut into wedges or slices and serve at room temperature on a platter with strong coffee or tea.
