Classic gingerbread cookies.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)3 cups
Dry ginger powder (ground ginger)1 tbsp
Cinnamon powder2 tsp
Nutmeg¼ tsp
Baking soda (bicarb soda, bicarbonate of soda)¾ tsp
Salt¼ tsp
Butter½ cup, soft
Brown sugar½ cup
Molasses (black treacle)½ cup
Egg1
Sugar1 cup, powdered, for icing
Egg white½, for icing

Method

5 steps
  1. 1Whisk the maida, ginger, cinnamon, nutmeg, soda and salt.
  2. 2Cream butter and brown sugar, beat in the molasses and egg, then the flour mix.
  3. 3Divide into two discs, wrap and chill 1 hour.
  4. 4Roll 1/4 inch thick and cut shapes. Bake at 175 C for 8 to 10 minutes.
  5. 5Cool completely. Beat the powdered sugar with the egg white into a thick icing and pipe faces and buttons.
Serve it like this

Lay decorated cookies on a board or tie in bags with ribbon as gifts; serve with hot chocolate.
