Ingredients

4 servings
Chicken, bonelessbreast or thigh, poached
Cabbageshredded
Carrot1, julienned
Onion1 small, thinly sliced and soaked
Mint leavesa handful, or Vietnamese coriander
Coriander leaves (cilantro)a handful
Peanuts3 tbsp, roasted and crushed
Shallots2, sliced for frying
Cooking oil (vegetable oil)1 tbsp
Fish sauce2 tbsp
Lemon juice3 tbsp lime juice
Sugar1½ tbsp
Garlic2 cloves
Green chilli1, sliced

Method

4 steps
  1. 1Poach chicken in simmering water until cooked through with no pink. Cool and shred.
  2. 2Fry the sliced shallots in oil until golden and crisp.
  3. 3Mix fish sauce, lime, sugar, garlic and chilli until the sugar dissolves.
  4. 4Toss chicken, cabbage, carrot, onion and herbs with the dressing. Top with peanuts and fried shallots.
Serve it like this
