Curd (plain yogurt, natural yoghurt)2 cups, slightly sour
Besan (chickpea flour, gram flour)3 tbsp
Water3 cups
Ginger2.5 cm, as paste
Green chilli1 to 2, as paste
Sugar1 tbsp
Saltto taste
Ghee1 tbsp
Cumin seeds½ tsp
Mustard seeds½ tsp
Fenugreek seedsa few
Whole spices1 small stick cinnamon, 3 cloves
Dried red chilli1
Curry leaves1 sprig

- 1Whisk the curd and besan together until smooth, then whisk in the water, ginger chilli paste, sugar and salt.
- 2Heat on medium, stirring constantly, until it comes to the first boil.
- 3Lower the heat and simmer, stirring now and then.
- 4Heat the ghee. Add mustard, cumin, fenugreek, cinnamon, cloves, red chilli, curry leaves and asafoetida. Pour over the kadhi.
- 5Cover for a minute, add coriander and serve hot with khichdi or rice.
