Macaroni1¼ cups
Chicken stock (chicken broth)3 cups
Cooked ham4 slices, in strips
Egg2, fried
Sweet corn kernels (corn kernels)⅓ cup
White peppera pinch
Saltto taste
Spring onion (green onion, scallion)1, sliced
Cooking oil (vegetable oil)2 tsp

Method

  1. 1Boil the macaroni in water until soft, a little past al dente. Drain and rinse.
  2. 2Heat the stock with corn and season with salt and white pepper.
  3. 3Fry the eggs sunny side up and warm the ham strips in the pan.
  4. 4Put macaroni in bowls, ladle over broth and top with ham, egg and spring onion.
Serve it like this

Serve in a deep bowl with the egg on top, buttered toast and a cup of Hong Kong milk tea alongside.
