Ingredients

Jowar flour (sorghum flour)2 cups
Water1¼ cups, boiling
Salta pinch

Method

7 steps
  1. 1Bring the water and salt to a rolling boil. Tip in 2 cups of flour, stir once, cover and switch off.
  2. 2While still warm, knead with wet palms until smooth.
  3. 3Divide into 8 balls. Keep them covered with a damp cloth.
  4. 4Dust the board with jowar flour and pat a ball into a thin round with your palm, turning it as you go.
  5. 5Lay it on a hot tawa, dry side up. Wipe the top with a wet cloth or wet fingers.
  6. 6Flip, cook the second side, then puff it directly over the flame or press with a cloth on the tawa.
  7. 7Stack in a cloth lined box and serve warm.
Serve it like this
