Ingredients

4 servings
Bamboo shoot400 g tender bamboo shoot, sliced
Potato1 large, cubed
Mustard oil2 tbsp
Onion1 medium, sliced
Garlic5 cloves, chopped
Green chilli3, slit
Tomato1, chopped
Turmeric (ground turmeric)½ tsp
Kashmiri chilli powder1 tsp
Coriander powder (ground coriander)1 tsp
Saltto taste

Method

4 steps
  1. 1Boil the sliced bamboo shoot in plenty of water for 10 minutes and drain. Repeat once if it smells strong.
  2. 2Heat mustard oil until smoking, add garlic, onion and chillies and fry until golden.
  3. 3Add potatoes, tomato and the powdered spices and cook until the tomato softens.
  4. 4Add the bamboo shoot and salt, cover and cook until the potatoes are done and the mix is dry.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
