Ingredients

2 servings
Cooked rice3 cups day old jasmine rice
Chicken, bonelessthinly sliced
Egg2
Onion1 small, sliced
Garlic4 cloves, chopped
Tomato1, in wedges
Spring onion (green onion, scallion)2, sliced
Fish sauce1 tbsp
Soy sauce2 tsp
Jaggerya pinch of sugar
White pepper¼ tsp
Cooking oil (vegetable oil)2 tbsp
Cucumberslices, to serve
Lemonlime wedges
Coriander leaves (cilantro)a few sprigs

Method

4 steps
  1. 1Heat oil in a wok until smoking. Fry the garlic for 10 seconds, then the chicken until cooked through with no pink.
  2. 2Push aside, add the eggs and scramble until just set. Add onion and tomato and toss for a minute.
  3. 3Add the rice, breaking clumps, and toss over high heat. Season with fish sauce, soy, sugar and white pepper.
  4. 4Toss in spring onion and serve with cucumber, coriander and lime.
Serve it like this

Press into a bowl and turn out as a neat dome, with cucumber slices, a lime wedge and a spoon of fish sauce with chillies alongside.
