Maida (all-purpose flour, plain flour)2½ cups
Baking powder2 tsp
Butter2 tbsp
Milk⅔ cup
Salta pinch
Sugar2 cups, for the syrup
Water1 cup
Lemon juice1 tbsp
Gingera few slices
Whole spices1 cinnamon stick
Cooking oil (vegetable oil)for frying (about 5 tbsp absorbed)Method
- 1Make the syrup the day before: boil sugar, water, ginger and cinnamon 5 minutes, add lemon, cool and chill until very cold.
- 2Rub butter into flour, baking powder and salt. Add milk and knead to a soft dough. Rest 1 hour.
- 3Roll 1 cm thick, cut strips, cut each into 3 strands joined at the top and plait. Pinch ends.
- 4Fry in medium hot oil until golden, then plunge straight into the cold syrup for 30 seconds. Lift onto a rack.
