Ingredients

Chicken, boneless400 g boneless, in thin strips
Kolhapuri masala1 tbsp
Ginger garlic paste1 tbsp
Saltto taste
Egg noodles300 g dried
Cooking oil (vegetable oil)2 tbsp
Onion1, sliced
Cabbage¼ medium, shredded
Carrot1, in matchsticks
Capsicum (green capsicum, green bell pepper)1, sliced
Tonkatsu sauce3 tbsp
Soy sauce2 tbsp
Tomato ketchup (ketchup)1 tbsp
Tamarind1 tsp paste
Spring onion (green onion, scallion)2, sliced
Pickled ginger2 tbsp
Nori sheets1 sheet, crumbled
Peanuts2 tbsp, roasted and crushed

Method

7 steps
  1. 1Toss the chicken with the kolhapuri masala, ginger garlic paste and salt. Rest 10 minutes.
  2. 2Cook the noodles in boiling water on high heat 1 minute less than the packet says. Drain, rinse and toss with 1 tsp oil.
  3. 3Mix the tonkatsu sauce, soy, ketchup and tamarind into a sauce.
  4. 4Heat 1 tbsp oil in a wok on high heat. Stir fry the chicken 4 to 5 minutes until browned and no pink remains. Lift out.
  5. 5Add the remaining oil, then the onion, cabbage, carrot and capsicum. Stir fry 2 minutes on high heat.
  6. 6Add the noodles, chicken and sauce. Toss on high heat 2 minutes until the noodles are coated and slightly charred.
  7. 7Pile onto plates and top with spring onion, peanuts, nori and pickled ginger.
Serve it like this

Twist the noodles into a tall nest on a flat plate with tongs, tuck chicken around the base, and crown with pickled ginger, peanuts and a pinch of nori.
