Ingredients

4 servings
Cooked rice3 cups cooked rice, cooled
Coriander leaves (cilantro)1 big bunch, with tender stems
Green chilli2
Ginger1.5 cm
Fresh grated coconut3 tbsp
Urad dal (split black gram)2 tsp
Chana dal (split chickpeas)2 tsp
Dried red chilli1
Tamarinda small piece
Cooking oil (vegetable oil)1½ tbsp
Mustard seeds½ tsp
Curry leaves1 sprig
Peanuts1½ tbsp
Asafoetidaa pinch
Salt1 tsp

Method

4 steps
  1. 1Roast half the urad and chana dal with the red chilli in 1 tsp oil till golden. Cool.
  2. 2Grind the roasted dals with coriander, green chilli, ginger, coconut, tamarind and salt to a thick paste with little water.
  3. 3Heat the rest of the oil, fry peanuts, then mustard, remaining dals, curry leaves and asafoetida.
  4. 4Add the paste and saute 2 to 3 minutes, then add the rice and toss gently on low.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
