Ingredients

12 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Baking powder2 tsp
Butter½ cup for sponge, 2 tbsp for icing
Sugar¾ cup for sponge, 2 cups icing sugar
Egg3
Milk½ cup for sponge, 1/2 cup for icing
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Cocoa powder (unsweetened cocoa powder)⅓ cup
Desiccated coconut (unsweetened shredded coconut)2 cups

Method

4 steps
  1. 1Cream butter and sugar, beat in eggs and vanilla, fold in flour and baking powder with milk. Bake in a 20 by 30 cm tin at 180 C for 25 minutes.
  2. 2Cool, then chill or freeze 1 hour and cut into 12 squares.
  3. 3Whisk icing sugar, cocoa, butter and hot milk into a thin icing.
  4. 4Dip each square in icing, roll in coconut and set on a rack.
Serve it like this
