Ingredients

6 servings
Potato5 medium floury potatoes
Butter3 tbsp for the dough, the rest for spreading
Fresh cream (thickened cream, heavy cream)¼ cup
Salt¾ tsp
Sugar2 tsp for the dough, the rest to sprinkle
Maida (all-purpose flour, plain flour)1½ cups, plus more for rolling
Cinnamon powder1½ tsp

Method

5 steps
  1. 1Boil the potatoes, peel and rice them while hot. Mix in 3 tbsp butter, cream, salt and 2 tsp sugar. Cool completely, ideally overnight.
  2. 2Knead in the flour to a soft dough and divide into 12 balls.
  3. 3Roll each ball paper thin on a well floured surface.
  4. 4Cook on a very hot dry griddle about 1 minute per side.
  5. 5Stack under a towel to steam soft. Spread with butter, sprinkle with cinnamon sugar and roll up.
Serve it like this

Serve rolled and cut in half on a board, still soft and slightly warm, with extra butter and cinnamon sugar.
