Liangpi, the cold skin noodles of Shaanxi.

Ingredients
Maida (all-purpose flour, plain flour)2½ cups, for washing
Waterabout 2 1/2 cups
Salt½ tsp
Cucumber1, in thin strips
Moong sprouts (mung bean sprouts)1 cup bean sprouts, blanched
Garlic4 cloves, crushed with water
Chinese chilli oil4 tbsp
Chinkiang black vinegar3 tbsp
Soy sauce1 tbsp plus 1 tsp
Sugar1 tsp
Chinese sesame paste1 tbsp, thinned
Coriander leaves (cilantro)a handful
Method
5 steps
1Knead the flour with 180 ml water into a dough and rest 30 minutes. Then wash it in a bowl of water, squeezing, until only gluten remains. Keep the milky water.
2Let the starch water settle 2 hours, pour off the clear top and stir the thick starch back up.
3Brush a tray with oil, pour in a thin layer of starch and steam over boiling water for 2 minutes until it bubbles and turns translucent. Cool in cold water and peel. Repeat.
4Steam the gluten 15 minutes, cool and tear into cubes. Cut the sheets into wide strips.
5Toss noodles, gluten, cucumber and sprouts with the garlic water, chilli oil, vinegar, soy, sugar and sesame paste. Top with coriander.
Serve it like this
Serve chilled in a wide bowl with cucumber and sprouts piled on top and the red chilli oil pooled around, with a roujiamo alongside.
