Ingredients

4 servings
Pasta400 g linguine
Prawns (shrimp)250 g, shell on
Clams400 g in shell, purged
Squid200 g, cut into rings
Olive oil3½ tbsp
Garlic5 cloves, sliced
Dried red chilli½ tsp flakes
Dry white wine½ cup
Tomato300 g cherry tomatoes, halved
Flat leaf parsleya handful, chopped
Saltto taste

Method

5 steps
  1. 1Warm oil with garlic and chilli, add squid and cook 1 minute.
  2. 2Add clams and wine, cover and cook until they open.
  3. 3Add tomatoes and prawns; cook until prawns are pink.
  4. 4Cook linguine 2 minutes short, finish in the seafood sauce with a splash of pasta water, tossing.
  5. 5Discard unopened clams. Finish with parsley and raw oil.
Serve it like this

Serve in a big warm platter or wide bowls with the shells on top, parsley scattered over and a bowl for empty shells.
