Spice traders' curry

Massaman is a Thai curry with warm spices like cardamom, cinnamon and cloves, and its name is often linked to Persian and Muslim traders. Malai kofta is a rich North Indian dish of fried paneer and potato dumplings in a creamy sauce.

Both carry the cardamom trail.
