Sugar1½ cups, divided
Water1 cup
Lemon juice2 tsp

Ripe mango1 cup purée
Curd (plain yogurt, natural yoghurt)⅔ cup
Cooking oil (vegetable oil)4 tbsp
Cardamom1 tsp
Rava (semolina)1 cup, fine
Maida (all-purpose flour, plain flour)½ cup
Baking powder1½ tsp
Pistachios2 tbsp, choppedMethod
- 1Simmer 200 g sugar with the water at a gentle simmer for 8 minutes. Add the lemon and saffron and cool.
- 2Whisk the eggs with the remaining sugar for 3 minutes. Whisk in the mango, curd, oil and cardamom.
- 3Fold in the rava, maida and baking powder. Rest the batter 15 minutes.
- 4Pour into a lined 20 cm square tin and bake in the oven at 180°C for 30 to 35 minutes.
- 5Cut into squares in the tin, pour the cool syrup over the hot cake and scatter pistachios. Rest 1 hour.
Serve it like thisSet a square on a small plate with a spoon of thick curd or cream beside it, a few mango cubes, and a pinch of pistachio on top.
