Basmati rice1 cup, rinsed and soaked 15 minutes
Cooking oil (vegetable oil)2 tbsp
Onion1, chopped
Garlic3 cloves, minced
Green chilli1, chopped
Tomato puree¾ cup
Capsicum (green capsicum, green bell pepper)½, diced
Sweet corn kernels (corn kernels)⅓ cup
Rajma, dry (dried red kidney beans)¼ cup dry, soaked and boiled
Kashmiri chilli powder1 tsp
Cumin powder (ground cumin)½ tsp
Dried mixed herbs (italian seasoning)1 tsp oregano
Water1½ cups

Lemon juice2 tsp
Coriander leaves (cilantro)2 tbsp, choppedMethod
- 1Drain rice and toast in oil for 2 minutes.
- 2Add onion, garlic and chilli and cook until soft.
- 3Add tomato puree, spices, herbs and salt and cook 3 minutes.
- 4Add water, capsicum, corn and beans. Cover and cook on low for 12 to 15 minutes until the water is absorbed.
- 5Rest 5 minutes, fluff, add lemon and coriander.
Serve it like thisFluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
