Ingredients

8 servings
Rice1½ cups rice, soaked overnight
Thick coconut milk1¼ cups
Sugar⅔ cup
Instant dry yeast1½ tsp
Cardamom1 tsp
Cooking oil (vegetable oil)for the tray

Method

3 steps
  1. 1Blend the soaked rice with coconut milk, sugar, yeast and cardamom until very smooth.
  2. 2Cover and ferment in a warm place until bubbly and doubled, about 2 hours.
  3. 3Heat an oiled tray or ovenproof pan, pour in the batter and cook on the hob 10 minutes, then bake at 180 C until golden on top.
Serve it like this

Cut into diamonds or wedges and serve with spiced tea.
