Classic mooli bhurji.

Ingredients

3 servings
Radish (daikon radish, mooli)3 medium, grated, with greens chopped
Spinacha handful, or radish greens
Mustard oil1½ tbsp
Ajwain (carom seeds)½ tsp
Asafoetidaa pinch
Green chilli2, chopped
Ginger1.5 cm, grated
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Dry mango powder½ tsp
Saltto taste

Method

4 steps
  1. 1Squeeze the grated radish lightly to remove some juice.
  2. 2Heat mustard oil, add ajwain and asafoetida, then green chilli and ginger.
  3. 3Add the radish, greens, turmeric and salt. Cook uncovered on medium until dry.
  4. 4Finish with chilli powder and amchur.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
