Ingredients

Brinjal (eggplant, aubergine)2 large bharta brinjals (aubergine)
Tahini3 tbsp
Curd (plain yogurt, natural yoghurt)¼ cup thick
Lemon juice2 tbsp
Garlic1 large clove, crushed
Olive oil1 tbsp
Pomegranate seeds2 tbsp seeds
Flat leaf parsleya few leaves
Saltto taste

Method

4 steps
  1. 1Char the brinjals directly on a gas flame, turning, until collapsed and black all over.
  2. 2Cool in a covered bowl, peel, and drain the flesh in a sieve for 10 minutes.
  3. 3Mash with a fork, then beat in tahini, curd, lemon, garlic and salt.
  4. 4Spread on a plate and finish with olive oil, pomegranate and parsley.
Serve it like this

Spread on a flat plate with a spoon swirl, olive oil in the grooves, pomegranate and parsley on top. Serve at room temperature.
