Jaggery1 tbsp
Red chilli powder (indian red chili powder)2 tsp
Turmeric (ground turmeric)¼ tsp
Rice flour1 tbsp
Water3 cups
Cooking oil (vegetable oil)1½ tbsp
Mustard seeds½ tsp
Fenugreek seeds¼ tsp

Curry leaves2 sprigs
Coriander leaves (cilantro)a handful
Saltto tasteMethod
- 1Heat oil, temper mustard, fenugreek, red chilli and curry leaves. Add onion and vegetables and saute 3 minutes.
- 2Add tamarind extract, water, chilli, turmeric, jaggery and salt. Simmer until vegetables are tender.
- 3Stir in rice flour mixed with water and simmer until slightly thick. Add coriander.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
