Classic mutton kofta curry.

Ingredients

4 servings
Minced mutton (goat mince, ground goat)500 g
Onion2 large: 1 grated and squeezed, 1 chopped
Roasted chana dal (roasted split chickpeas)2 tbsp, powdered
Ginger garlic paste2 tbsp
Green chilli2, chopped
Coriander leaves (cilantro)chopped
Garam masala1½ tsp
Cooking oil (vegetable oil)3 tbsp
Whole spicesbay leaf, cardamom, cloves
Tomato3 medium, pureed
Curd (plain yogurt, natural yoghurt)½ cup
Turmeric (ground turmeric)¼ tsp
Kashmiri chilli powder1½ tsp
Coriander powder (ground coriander)2 tsp
Water1⅔ cups
Saltto taste

Method

4 steps
  1. 1Mix the keema with the grated onion, roasted chana powder, half the ginger garlic paste, green chilli, coriander, half the garam masala and salt. Knead and roll into walnut sized balls.
  2. 2Heat oil, add whole spices and the chopped onion and fry until golden brown. Add remaining ginger garlic paste and powders, then tomato puree and curd. Cook until oil separates.
  3. 3Add hot water and bring to a boil. Gently drop in the koftas, do not stir for 5 minutes.
  4. 4Simmer covered 20 minutes, shaking the pan, until the koftas are cooked through and the gravy thick. Finish with garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
