Classic Nigerian meat pie.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)4 cups
Butter250 g, cold, cubed
Baking powder1 tsp
Salt½ tsp plus to taste
Egg2 (one for dough, one for wash)
Watercold, as needed
Minced mutton (goat mince, ground goat)400 g beef or mutton mince
Potato2, small dice
Carrot1, small dice
Onion1, chopped
Curry powder1½ tsp
Dried thyme1 tsp
Stock cube (bouillon cube)1 cube
Cornflour (cornstarch)1 tbsp, in water
Cooking oil (vegetable oil)1 tbsp

Method

5 steps
  1. 1Rub butter into flour, baking powder and salt. Add one egg and cold water to form a dough. Chill 30 minutes.
  2. 2Brown mince with onion in oil. Add curry powder, thyme, cube, potato, carrot and a cup of water. Simmer until soft.
  3. 3Thicken with the cornflour slurry. Cool the filling.
  4. 4Roll the dough, cut circles, fill, fold, seal with a fork. Brush with beaten egg.
  5. 5Bake at 180 C until golden.
Serve it like this

Serve warm on a platter or wrapped in a napkin, with cold zobo or a soft drink. Great in lunchboxes too.
