Classic Nigerian okra soup.

Ingredients

Okra (lady's finger)500 g, finely chopped or grated
Red palm oil3½ tbsp
Beef400 g, boiled
Dried salted fishsmoked fish, flaked
Prawns (shrimp)150 g
Ground dried crayfish (ground dried shrimp)2 tbsp
Onion1, chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, minced
Spinacha handful, chopped
Stock cube (bouillon cube)1 cube
Water3 cups beef stock
Saltto taste

Method

4 steps
  1. 1Heat the stock with the boiled beef, fish, crayfish, onion and scotch bonnet. Simmer 10 minutes.
  2. 2Add palm oil and simmer 5 minutes.
  3. 3Add the okra and prawns. Cook uncovered on medium.
  4. 4Stir in spinach, cook 2 minutes, adjust salt.
Serve it like this

Serve in a deep bowl with prawns and meat on top, with eba, fufu or pounded yam alongside.
