Ingredients

6 servings
Onion2 large, cut into 1 cm rings
Maida (all-purpose flour, plain flour)1 cup
Cornflour (cornstarch)¼ cup
Baking powder1 tsp
Salt1 tsp plus extra
Kashmiri chilli powder1 tsp, as paprika
Milk¾ cup plus 2 tbsp
Egg1
Breadcrumbs1 cup, panko if you have it
Cooking oil (vegetable oil)for deep frying (about 1/3 cup absorbed)

Method

  1. 1Separate onion rings and soak in cold water 10 minutes; pat dry.
  2. 2Toss rings in a little flour. Mix the rest of the flour, cornflour, baking powder, salt and paprika; whisk in milk and egg.
  3. 3Dip rings in batter, then press into breadcrumbs.
  4. 4Fry at 180 C in batches for 2 to 3 minutes until golden. Drain and salt.
Serve it like this

Stack rings on a skewer or in a basket, sprinkle salt and serve with ketchup, ranch or a smoky mayo.
