Garlic6 cloves

Tulsi leaves (holy basil)1 packed cup holy basil (tulsi) leaves
Oyster sauce1 tbsp
Soy sauce2 tsp
Fish sauce2 tsp
Jaggery1 tsp
Water2 tbsp
Cooking oil (vegetable oil)2 tbsp, plus extra for the eggs

- 1Pound the garlic and chillies to a rough paste.
- 2Fry the eggs in hot oil, spooning oil over until the edges are lacy and the yolk is still runny. Set on the rice.
- 3In 1 tbsp oil fry the garlic chilli paste for 20 seconds, then add the chicken and stir over high heat until cooked through with no pink.
- 4Add oyster sauce, soy, fish sauce, palm sugar and water. Toss until glossy, then throw in the basil and stir until just wilted.
Serve it like thisMound rice on a plate, spoon the basil chicken beside it and crown with the crispy egg. Serve with prik nam pla: fish sauce with sliced chillies.
