Colocasia leaves (taro leaves)8 large leaves
Rice1 cup, soaked 3 hours
Fresh grated coconut½ cup
Dried red chilli6 byadgi chillies
Coriander seeds1 tsp
Cumin seeds½ tsp
Tamarinda lemon sized ball
Jaggery2 tbsp
Turmeric (ground turmeric)¼ tsp
Asafoetidaa pinch
Coconut oil1½ tbsp
Mustard seeds½ tsp

- 1Wash the leaves, pat dry and shave the thick veins flat with a knife.
- 2Grind soaked rice, coconut, chillies, coriander, cumin, tamarind, jaggery, turmeric, asafoetida and salt to a thick paste.
- 3Lay a leaf vein side up, spread paste, top with another leaf, repeat 3 to 4 layers, fold the sides in and roll tightly.
- 4Steam the rolls for 30 to 35 minutes, then cool completely.
- 5Slice into rounds and shallow fry in coconut oil with mustard and curry leaves until crisp on both sides.
