Ingredients

8 servings
Egg white6 egg whites, room temperature
Sugar1½ cups caster sugar
Cornflour (cornstarch)1 tbsp
Vinegar1 tsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Fresh cream (thickened cream, heavy cream)1¼ cups, whipped
Strawberries200 g, halved
Kiwi fruit2, sliced
Pomegranate seeds½ cup arils, or passionfruit pulp

Method

4 steps
  1. 1Whisk whites to soft peaks, then add sugar a spoon at a time, whisking until thick and glossy.
  2. 2Fold in cornflour, vinegar and vanilla. Shape a 22 cm round on lined tray, building the sides higher.
  3. 3Bake at 120 C for 1 1/4 hours. Turn off oven and cool inside with the door ajar.
  4. 4Just before serving, top with whipped cream and fruit.
Serve it like this

Bring the whole pavlova to the table on a flat platter and cut into wedges; the crackle is part of the show.
