Ingredients

6 servings
Rice¼ cup gobindobhog rice
Milk1½ litres full cream
Sugar½ cup
Bay leaf (indian bay leaf)1
Cardamomfrom 2 pods
Ghee1 tsp
Cashews10
Raisins1 tbsp

Method

5 steps
  1. 1Wash the rice, drain well and rub it with the ghee.
  2. 2Bring the milk to a boil in a wide heavy pan with the bay leaf and cardamom, then simmer 10 minutes, stirring.
  3. 3Add the rice and simmer, stirring often and scraping the bottom, until the rice is fully cooked and the milk has reduced by about a third.
  4. 4Add the sugar and simmer 5 minutes more, then stir in the cashews and raisins.
  5. 5Serve warm, or chill it. It thickens as it cools.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
