Classic peanut butter energy balls.

Ingredients

8 servings
Rolled oats (porridge oats)1¼ cups rolled oats
Peanut butter⅓ cup plus 1 tbsp
Dates8 soft dates, pitted
Chia seeds1 tbsp
Flax seeds (linseed)1 tbsp ground
Dark chocolate (bittersweet chocolate)¼ cup chopped or chips
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Salta pinch

Method

4 steps
  1. 1Blitz the dates into a sticky paste. If they are dry, soak in hot water for 10 minutes first.
  2. 2Mix in the peanut butter, oats, seeds, chocolate, vanilla and salt until it holds when pressed.
  3. 3Chill for 15 minutes, then roll into 16 balls with damp hands.
  4. 4Store in the fridge for a week or freeze for a month.
Serve it like this
