Ingredients

4 servings
Prawns (shrimp)400 g cooked, peeled prawns
Mayonnaise⅓ cup
Tomato ketchup (ketchup)2 tbsp
Lemon juice2 tsp
Worcestershire saucea few dashes
Red chilli saucea dash of Tabasco style hot sauce
Lettuce1 small head, shredded
Cucumber½, diced
Kashmiri chilli powdera pinch, as paprika
Lemonwedges, to serve

Method

4 steps
  1. 1If using raw prawns, poach 2 to 3 minutes until pink, then chill in iced water.
  2. 2Mix mayo, ketchup, lemon, Worcestershire and hot sauce into Marie Rose sauce.
  3. 3Fill glasses with lettuce and cucumber, pile on prawns and spoon over sauce.
  4. 4Dust with paprika and add a lemon wedge.
Serve it like this

Serve in chilled glasses or small bowls with brown bread and butter on the side.
