Ingredients

3 servings
Rava (semolina)1 cup
Waterabout 2 1/2 cups
Cooking oil (vegetable oil)1½ tbsp
Ghee2 tsp
Mustard seeds½ tsp
Urad dal (split black gram)1 tsp
Chana dal (split chickpeas)1 tsp
Ginger2.5 cm, chopped
Green chilli2, chopped
Onion1 small, chopped
Curry leaves1 sprig
Cashews8
Carrot1 small, diced
Green peas¼ cup
Saltto taste
Lemon juice2 tsp
Coriander leaves (cilantro)a handful

Method

6 steps
  1. 1Dry roast the rava on low heat until it smells toasty. Set aside.
  2. 2Heat oil, splutter mustard, then add urad dal, chana dal and cashews.
  3. 3Add ginger, green chilli, curry leaves and onion. Cook until soft. Add carrot and peas.
  4. 4Pour in water and salt. Bring to a rolling boil.
  5. 5Lower the heat and pour in rava in a thin stream, stirring all the time.
  6. 6Cover and cook on low. Add ghee, lemon juice and coriander and fluff.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
