Tomato4 ripe
Onion½
Garlic3 cloves, unpeeled
Dried red chilli3 hot dried chillies, or chiles de árbol
Green chilli2
Coriander leaves (cilantro)small handful
Lemon juice2 tsp lime
Saltto taste

Method

3 steps
  1. 1Char tomatoes, onion, garlic and green chillies on a dry tawa, turning, until blackened in spots.
  2. 2Toast the dried chillies for a few seconds only.
  3. 3Peel the garlic, then blend or pound everything with coriander, lime and salt to a coarse salsa.
Serve it like this

Spoon into a small clay bowl and set on the table with tacos, eggs or chips. Keeps 4 days in the fridge.
