Fish fragrant, no fish

Yuxiang, fish fragrant, is a Sichuan sauce of chilli bean paste, garlic, ginger, sugar and vinegar that contains no fish. Baingan bharta is a Punjabi dish of fire roasted brinjal.

The smoke and the sauce are both famous.
