Lobia, dry (dried black eyed peas)1½ cups dry, soaked overnight
Bacon (streaky rashers, streaky bacon)4 rashers, chopped
Onion1, chopped
Celery1 stalk, chopped
Garlic3 cloves, minced
Chicken stock (chicken broth)4 cups
Bay leaf (indian bay leaf)1
Dried thyme½ tsp
Red chilli powder (indian red chili powder)a pinch of cayenne

- 1Soak the peas overnight, then drain and rinse.
- 2Cook the bacon in a heavy pot until the fat runs and it starts to crisp. Add onion and celery and cook until soft, then garlic.
- 3Add peas, stock, bay, thyme and cayenne. Bring to a boil, then simmer partly covered for 45 to 60 minutes.
- 4Mash a ladle of beans against the side of the pot, stir, and season with salt and pepper.
Serve it like thisServe in shallow bowls with some broth, a dash of hot sauce and chopped onion on top. Cornbread and greens complete the plate.
