Classic Punjabi lassi.

Ingredients

2 servings
Curd (plain yogurt, natural yoghurt)2½ cups, thick and chilled
Sugar3 tbsp
Milk½ cup, chilled
Cardamoma pinch
Fresh cream (thickened cream, heavy cream)2 tbsp malai, to top
Watera few ice cubes

Method

3 steps
  1. 1Churn the curd, sugar and cardamom with a mathani or whisk until smooth and frothy.
  2. 2Add milk and ice and churn again.
  3. 3Pour into tall glasses and top with malai.
Serve it like this

Pour into glasses just before serving, nicely chilled or piping hot, whichever it's meant to be.
